The pricing for pork is as follows:

Half or Whole: $3.00/lb

There is also a $0.70/lb processing fee that is due to the butcher. All of these prices are based on the hanging weight of the animal. The hanging weight is the weight of the carcass after it is dressed out, which includes the bones.

The butcher also charges a ‘harvest fee’ that covers their labor in butchering the animal and discarding of the skin, etc. This fee is $45.00 per head or $22.50 for a half.

Roughly a half will weigh between 80-100 lbs hanging weight. Keep in mind that the hanging weight does include bone and after it is all packaged you will have around 65%-70% of the hanging weight in packages. So, here is a rough estimate of what a half of pork would cost.

90 lbs x $3.00 = $270.00

90 lbs x $0.59 = $53.10


Total: $345.60

Of course this will vary with what the actual weight of the animal is. There is an additional fee for making patties, links, and smoked meats. The patties and links are $0.50/lb and any smoked meat is $1.00/lb.

As far as how many cuts you will get will also vary on the size of the animal. Below is an estimate on a 90 pound half.

Pork Chops: 32 @ ½” thick

Loin Roast: 3 @ 2.5 pounds

Shoulder Roast: 3 @ 3 pounds

Tenderloin Roast: 4 @ 2 pounds (The tenderloin roast is basically a boneless pork chop. You can either choose to have the pork chops or the tenderloin roast as they are from the same cut on the pork. Or, you can choose half pork chops and half tenderloin roast.)

Ham: There are about 22 pounds of ham on a half. You can choose to have it split into smaller roasts (2-3 pounds) or part of it sliced into steaks. Or, if you don’t want all of the ham part of it can be put into the ground meat.

Spare Ribs: 3 packages at 1.5 pounds

Bacon or Fresh Side Pork: 7-8 pounds

Ground Meat: 15 pounds. This can be in any form: bulk, links, or patties for sausage; or bratwurst.

Any cut of meat that you would rather not have can just be left blank and that portion will go into the ground meat.  

You can customize your order to fit your needs. We mostly sell one pound package of bulk sausage, but if you use 2 pounds at a time just specify 2 pounds per package and they will do that.

If there is a certain cut that you want, but are unsure how to have it packaged, write ‘yes’ in the first column and the butcher will package it according to their standard procedure. A blank line, or a ‘no’, or line through the item means that you want that cut

A half of hog will take up between 2-3 cubic feet of freezer space and about double that for a whole.
